Summer Beet Salad


Quick and delicious go to for a healthy colorful side dish!

  • ¼ cup seasoned rice wine vinegar
  • 1 tbsp. vegetable oil
  • ¼ tsp. salt
  • ½ large sweet onion thinly sliced
  • 1 bunch of beets peeled and thinly sliced


  1. Combine rice wine vinegar, vegetable oil, salt and onions in a medium-large bowl. Allow onions to macerate in dressing while you prepare the beets.
  2. Peel and slice beets. Boil in salted water until fork tender, about 10 minutes. Drain and rinse with cold water. Allow beets to dry slightly. Add to onions and dressing. Toss until well coated. Chill well before serving.
